While fighting a piglin, you can give gold ingot, so you have up to 6 seconds to run away from piglin, just right click it with gold ingot. If 3 piglins are chasing you, do the same, just click on all piglins and you can escape from there. They should just ignore gold just to kill player that provoked them.
