As you can see in the attached screenshot, under the enderman's head, you can see through the water as if it's air. I assume somehow the special shape of the enderman model is interfering with the rendering of the water texture. I'm not a computer expert so I cannot know for certain though. I'll test if this happens with other mobs and leave updates if so.
