Community Consensus
If a player try to buy items from the villagers with SHIFT-click, he/she will get the correct number of the items. After the trading window closed, some emeralds pop-out and some of the items become "ghost" items. It will be replaced by other items from trading, or just disappear after the player re-enter the game. I've tested this in Minecraft 1.4 without any mods.

MC-24633 Putting too many emeralds in a trade window than what the villager can trade, then shift-clicking the purchased item, appears to create all of the requested items when it does not.

MC-60199 when trading with villagers lets say you trade 1 emerald for 2 redstone but if you put 5 in and shift click you get 2 redstone if you try trading again on the same page it will delete all the redstone you got

MC-4587 Trading with villagers in C and S mode, items in the product box sometimes won’t allow shift click, or it will, but it disappears and/or gives you back the emerald/item you used to trade with, and the GUI will drop a full stack of emeralds when you exit.
