I have made my own village by building houses and bringing villagers from a naturally spawning village.
I set up work stations for the jobs I wanted to be filled.
However, my villagers are breeding like insane rabbits. I've tried everything. Stopped feeding them, stopped trading with them, took away all beds.   Nothing works. Every few minutes a new baby pops up.
Also, more than one villager is 'claiming' each work station. I have one fletching station and about ten fletchers, as an example. This is widespread over all their professions.
Currently I'm spending half my time in minecraft just killing villagers and golems, because the golems are also spawning out of control.  They are so much of a problem I can barely move around inside my village walls.
