As shown in the video, I engage in trading with a farmer villager. I open the interface, and the villager stands and looks at me while I ask my friend to come kill the villager I'm talking to. He does, and the villager dies. I then trade 1 emerald for 6 bread, which works even though the villager is dead.

This also applies to wandering traders.
