when you strip enchantments off an item (books, etc), the stripped items that you receive can no longer be stacked with that same item, which hasn't been stripped.

Items that have been stripped appear to have some sort of NBT tag on them that don't allow them to be stacked with the same item that hasn't been stripped, even though they are identical otherwise.
