Been wanting to get back into minecraft recently, however I'm finding the game mostly unplayable due to crazy lag spikes when placing/destroying blocks and interacting with other certain intractable objects.
Attached is a screenshot showing the lag spikes when activating/releasing a pressure plate, spikes are the same when placing/removing blocks.
Fresh vanilla install of the latest patch of minecraft, Allocated 4GB of memory to the game and none of my usages are getting anywhere close to 100%, memory tends to stay around 10-20% and my cpu usage is under 30% with stuff running in the background also (on a i7-6700k at 4GHz)
Absolutely no clue what could be causing this, tried turning the sounds off in case I was having an issue with audio that was causing the freezing but with all sounds set to 0% still no change. Seems to only be happening in multiplayer, not singleplayer. >> Also happens in singleplayer, but only in the world that was generated for the server, by the server. Tried placing down a pressure plate in the spawn area of a new world in singleplayer and there was no issue

EDIT: Some information on the server might be helpful, so the server is hosted locally on the same machine although is publicly open on the internet, average tick while empty is only just above 0.1ms and with just me on the server the avg tick increases to around 3ms give or take, Server launch options are -Xmx4096M -Xms2048M however once again it gets nowhere near cap usage and my computers overall usage isn't close to its limits.
