I converted a cleric zombie villager to a villager and its trades were for paper and enchanted books. Attached are a few images showing this.

I have not done any testing beyond what I have observed, so if there is a more general bug that involves all villager trades swapping around, I'm not aware of it, though I did try to search to find issues reporting something similar and couldn't seem to find anything.
