I entered my survival world and notice that all my villagers had lost their professions. Then I check and they were all still connected to their bed and working station and had all the same trades, the only thing that was wrong is they didn’t have their profession textures, they were all just the default villager. I even went onto a different world to confirm this wasn’t just an error on that specific world.
